Rainbow Skewers and Yogurt Dip
I wanted to find something visually appealing and fun to eat to teach kids on Food Revolution Day. I found a myriad of these recipes on the web. Here’s my version of Skewers and Dip.
Skewers and Base
Cut up, bite sized of one or two of the following in each color (per skewer)-
Red fruit- strawberry, raspberry, apple, watermelon
Orange fruit- orange, mango, cantaloupe
Yellow fruit- banana, pineapple
Green fruit- kiwi, green grape, green apple, honeydew
Blue fruit- blueberry
Purple fruit- red grape, blackberry, fig, plum
Half a melon, seeded (unless watermelon)
Wooden or bamboo skewers
Pierce a red fruit with the skewer through the NON-pointy end, first (to make a cap). Then, take an orange fruit and pierce it with the pointy end and push it all the way to the top next to the red fruit. Continue, in order, with the rest of the colors. When the rainbow is complete, take your skewer and push it into the halved melon. Continue with as many skewers as you like to make a melon rainbow!
1 cup plain yogurt
1 tablespoon honey
1 teaspoon pure vanilla extract
1/4 teaspoon cinnamon
Mint leaves, extra cinnamon, or berries for garnish (optional)
Mix all ingredients, well, in a serving bowl. Garnish if you like. Don’t be in the way of the dip and get skewered!
