Lu’s Gluten Free Banana Chocolate Pancakes
On a recent blip to England, I got to visit one of my favorite people, Lupe. We’ve been friends for years and have remained close, even though she now lives across the pond. She’s a big fan of ChikFood, calling it “ace”. (She’s too cool for me). She made me this deliciousness when I was over there. They are simple, gluten free and probably paleo…But, who cares? They’re TASTY!!!
2 very ripe bananas
1/4 tsp gluten free baking powder
pinch of pink himalayan salt
a few drops of vanilla
1/2 to 1 tbsp raw cacao nibs (I used finely chopped dark chocolate)
mild, unscented coconut oil (unless you don’t mind the strong coconut flavor)
Peel and mash the bananas, leaving some chunky bits – this helps to keep the pancakes light and somewhat fluffy. In a separate bowl, gently beat the eggs and add the vanilla, salt, cacao nibs and baking powder. Mix ingredients together, then add to the mashed bananas and stir all ingredients. Melt a bit of coconut oil (just enough to keep the pancakes from sticking) on a griddle or fry pan set on medium to medium high heat. Spoon or pour in the pancake batter. The smaller the circles/shapes, the easier it is to flip the pancakes. So, be sure not to make them too big. When the edges are firm, take a peek on the underside to check if they are a nice golden brown. Then, carefully flip the pancake. In a few minutes, peek again and when the cake is browned on that side, remove from pan and plate. Serve with LOTS of of real maple syrup. (This is Lupe’s favorite part. She is a self-confessed sugar addict, a relative of Buddy the Elf.)
