A Summer Afternoon
My friend, Breezy, and I have a saying, “Anything with an herb”. We are suckers for cocktails that combine herbs and infusions with liquor. If it has a “sprig” of anything, we’ll take it. You had us at rosemary. We are a mixologists’ dream and an old school bartenders’ nightmare. (I’m not sure of the punctuation on that. I’ve been taste testing.)
Anywho, I came up with this drink while trying to think of something exciting for this holiday weekend. My official taste tester upstairs, Katie, said it tasted like A Summer Afternoon. It’s definitely a day drinking cocktail. Perfect to enjoy this Memorial Day weekend. Start infusing!
First make the Thyme Ginger Syrup, well before you want to start imbibing. It needs to cool.
1/4 raw honey
1 cup water
20 sprigs of thyme
1- 2 inch piece of ginger, peeled and sliced
Heat all ingredients in a sauce pan over high heat, until it comes to a boil. Once at a boil remove from heat and let the syrup cool. Once cooled, strain through a sieve into a jar. This makes about a cup. It should last for a while in the fridge. But, you’ll probably use it all in one day… You alky. 😉
Ingredients for one cocktail:
4 Tablespoons or 1/4 cup tequila
Juice of two mandarin oranges
Juice of 1/2 a lemon
2 Tablespoons thyme ginger syrup
1 Strawberry, sliced
A few sprigs of thyme to garnish
In a rocks glass, muddle the strawberry. Fill glass with ice. Pour in tequila, orange and lemon juice and syrup. Stir. Garnish with sprigs of thyme. Enjoy your afternoon. Then, nap.
